Imperfectly Delicious Produce
In the US, forty percent of the food we produce is thrown away. That means over 6 Billion Pounds of Produce is Wasted Due to “Imperfections” When 80% of our water, 40% of our land and 10% of our energy is used to grow our country’s food, that’s an awful lot of resources to be wasting. Especially when 41 million Americans are food insecure.
Imperfectly Delicious Produce is a program we are supporting with Compass group – It’s all about fighting food waste, saving water, and connecting chefs to the farm. The goal is to regularly rescue cosmetically imperfect and underappreciated produce from going to waste. Cosmetically perfect produce is not always essential in food service when it is going to be chopped or diced. It is the flavor, not the appearance that is most important. Produce sold through this program must still meet our quality assurance standards. It is quality product that is going to waste because of stringent cosmetic standards that have nothing to do with flavor or food safety and can be sold to our customers at a savings.
